This must have been done:
A restaurant that serves great cheese prepared on individual crackers and served sushi/tapas style.
It would make a perfect wine bar addition:
Sesame Brie with Poupon Mustard
Aged Cheddar with Pesto on Ritz
Other ideas: Bake crackers fresh daily
A check off order sheet like at a sushi bar
If this hasn’t been done yet it is definitely worth a try. It would require excellent promotion and a wonderful presentation.
