One night in Maine we had a Lobster Roast and a sunset cruise. Both the cruise and the lobster were excellent and like everything in Maine picturesque.
One of the ladies dared to ask Captain Jim if they actually put live lobsters into boiling water.

He answered without skipping a beat that yes they did but that they were very careful to kill the lobsters humanely. They accomplished this by putting them head first into the boiling water so that they died instantly. We have found he said “that this is the most humane way to kill lobster.” He went on to say that the head-first method “caused the lobsters less stress and pain than any other way of killing them.
I’m not sure how he knows this but remarkably he said all with a straight face.
