If you are not watching your weight, fry em. Slice thin (1/4 inch long ways) flour with salt and pepper, about 1/2 inch oil in fry pan, brown and drain on paper towels. Just like you do green tomatos and little neck squash. good southern stuff. Actually it is just like we did the eggplants in eggplant parmesan except with out the egg wash.
I hear they make great compost bin fillers.

In this part of WNY, we lock our cars this time of year. Thievery is not any higher, but we really don’t WANT any more zucchini.
How about “zucchini henge”? One good photo and off to the compost heap.
